1)酶与发酵工程:新型食品酶发掘、基因的克隆和表达、酶制剂的发酵生产、纯化、性质和应用;
2)新酶的结构解析及分子改造:如新型葡聚糖酶、酯酶、几丁质酶、蛋白酶等;
3)食品营养与功能研究:利用生物技术制备功能性食品原料并进行功能评价,如功能性低聚糖及活性肽等;
4)食品加工方向:低聚糖的生产和功能、传统食品工业化和粮油加工等。
